  • What is bean-to-bar chocolate?

The bean-to-bar chocolate movement started in the early 2000. After visiting cacao plantations and developing new machines, these early chocolate makers developed a new method to make chocolate. The bean-to-bar chocolate, means that the chocolate maker is responsible for making the chocolate from the cacao beans until the chocolate bar.
Craft chocolate makers are looking for better quality beans and extracting the cacao flavours.

  • What does the % sign mean in the chocolate bar?

The % sign indicated the amount of cacao solids in the chocolate bar (this will also include the amount of cacao butter). The higher the percentage, greater will be the amount of cacao in your chocolate.

  • What is the difference between chocolatier and chocolate maker?

The chocolate maker is responsible for making the chocolate, in our case from the cacao beans until the chocolate bar. This will include selecting, roasting, cracking and winnowing the cacao beans, adding them to the melanger and finally tempering the chocolate.
In the case of the chocolatier, they are responsible for handling the chocolate once it is ready. Therefore, they buy the chocolate ready made and melt it. They can use the chocolate to make bonbons, chocolate bars, sculptures, etc. They will not handle the cacao beans.

  • What is single origin chocolate?

The term ‘single origin’ stated in the chocolate bar means that the cacao beans used to make this chocolate come from a single location. This can be a single plantation, farm or estate. In our case, not only we state the country of origin, we also include the exact plantation, farm or estate where we source our chocolate from.
